Andhra Sweets of Pongal (Sankranti) | Telugu Vantalu Preparations
Sankranti (Pongal) is special festival for Andhra – Telugu People. They do many types of sweets on this festive occasion. Few of them are given below for easy reference.
Gorumeetilu:
Ingredients:
All purpose flour-1cup
Sugar-2 Cups
Oil – for Fry
Butter-1/2 Cup
Bombay Rawa-1 Cup

Preparation:
Add Flour, Rawa, Butter and prepare the dough by adding water and keep aside for 10 minutes. Take small piece of dough and make it into the shape as shown in the picture and fry it till it becomes golden brown in color and keep aside. Prepare the sugar syrup and pour the syrup onto the fried balls so that the syrup gets into the item in mixture and becomes soft. Finally cool the mixture and store in an air tight container and serve.

Ariselu:
Ingredients required:
Rice Flour-needed
Jaggery – 1 Cup
Sesame Seeds-1/2 Cup
Ghee- For Fry

Method of Preparation:
Prepare the jaggery syrup and after it is prepared add the sesame seeds, ghee and rice flour as needed till the mixture becomes dough and keep aside. Heat the oil in a pan. Take small balls of the dough and make it into a desired shape and fry them in the hot oil and place them on a tissue paper so that the  oil is separated .

Boondi Laddu:
Ingredients:
Gram Flour-1 Cup
Sugar-1 Cup
Cashew nuts-1/2 Cup
Elachi Powder-pinch

Preparation Procedure:
Prepare the sugar syrup and keep aside. Mix the gram flour with water and prepare the bhoondhi by frying it in the hot oil and this to the sugar syrup and leave it for some time so that the whole mixture becomes soft. Finally add the elachi powder and fried cashew nuts to the mixture and make them into balls and leave it for some time to dry. Now the tasty dish is ready to serve.

Chethi Pakodilu:
Ingredients:
Rice Flour- 1 Glass
Soaked gram-1 Cup
Oil- for deep fry
Salt – to taste
Butter-a bit
Ginger Garlic Paste- 1 tsp
Coriender leaves-1/2 Cup

Method of Preparation:
Add Butter, soaked gram, salt, Coriander leaves and ginger garlic paste to the rice flour and make it into dough by adding water and keep aside. Now heat the oil in a pan and fry the dough mixture which is made into the desired shapes till it becomes golden brown in color.

Besan Laddu:
Ingredients:
Gram Flour-3 Cups
Sugar-21/52 Cups
Ghee- for taste
Oil – to fry

Making Process:
Make the gram flour into a paste by adding water and prepare Murukulu and powder them in a mixie and keep a side. Prepare the sugar syrup and add the prepared powder and add the elachi powder and ghee to the mixture and keep a side so that the mixture becomes cool. After that prepare the mixture into small balls and let it dry for some time and finally garnish it with cashew nuts and this dish can be stored for many days.
