How to prepare Masala Poori(puri) and Tarkari?
Masala poori (Puri)
All purpose flour – 2 cups turmeric powder – pinch
Coriander powder – 2tsp methi leaves – ¼ cup
Jeera powder – 1 ½ tsp water – 1 cup
Oil – for fry black pepper powder – ¼ tsp
Oil – 2tsp
Preparation method: All the ingredients are to be mixed well in a bowl and made into a dough by adding hot water and is to be cover with a wet cloth for 1hr. after 1hr take a small piece of dough and make into a chapatti and fry in the oil till it becomes golden brown in color. The masala puri is ready to serve hot.
Potato cubes – 4 cups oil – 1cup
Mentulu – ½ tsp garlic and cloves paste – 2tsp
Asafetida – pinch turmeric powder – ½ tsp
Salt – for taste peas – 2cups
Onion pieces – 1cup capsicum – ½ cup
Ingredients for the mixture: coriander seeds – 2tsp, cumin seeds – 1tsp (both are to be powdered well), curd – ½ cup, coriander – ½ cup, onion sticks – 2, black pepper powder – ½ tsp, red chili powder – 2tsp, tomato – 1 cut into 4 pieces.
Process of preparation: heat the oil in a pan and fry asafetida, methi seeds and garlic paste till it becomes golden brown. Then add potato cubes, turmeric powder and salt and onion pieces and fry well. After this add the peas, capsicum and sprinkle some water on it. Finally add curd and pepper powder for the mixture and after the whole mixture becomes cooked then add tomato pieces, onion sticks and water and decorate with the coriander leaves. This can be served with puri and chapatti.
