Rakhi festival is the symbol of relationship between brothers and sisters.  Rakhi is tied to the hand of the brother wishing the safety of the brother.  Sweets are fed to the brother and good wishes are conveyed. Here are recipes of some sweets that can be prepared on the occasion of Rakhi festival.

Carrot Burfi

Ingredients:  Grated carrot – 1 cup, graded coconut – 1 cup, milk – ½ liter, ghee – 1 spoon, sugar – 1 cup and cashew – ½ cup.

Preparation:  Fry grated carrot and grated coconut separately in ghee.  Boil milk.  Add sugar and stir well. After the sugar is dissolved, add the mixture of carrot and coconut.  Stir till the mixture leaves the sides of the pan.  Add fried cashew nuts and ghee to it. Transfer the contents to a plate.  Cut in to pieces and garnish with cashew.

Malpuva

Ingredients: Maida – ½ kg, Sugar – ¼ kg, Almonds, pista, cashew and walnuts – ¼ kg, Bananas – 6, cardamom – 4, Oil – to fry.

Preparation:  Cut the dry fruits into small pieces and mix in the flour.  Powder the cardamom and add to the flour.  Mash the bananas with hand.  Mix Maida in the banana mash.  Heat oil in a pan.  Take small portions of the mixture with a spoon put them in oil. Deep fry them till golden brown.  Remove on tissue paper to soak up excess oil.

Ingredients : Gram dal or chana dal or pachi senaga pappu – 1 cup, Green gram or pesara pappu – 1 cup, Black gram or minappappu – 1 cup, sugar – 3 cups, cardamom – 4, cashew, kishmish and badam – ½ cup, Ghee – 1 cup.

Preparation: All the dals has to be lightly fried separately without oil.  When they become cool grind them to a fine powder.  Fry cashew, almonds and kishmish in ghee.  Take the dals mixture in a pan put it on the stove.  After some time add ghee and stir well.  Add fried cashew, kishmish, almonds to this mixture.  Turn off the stove.  Make small laddus when the mixture is still hot. These laddus cannot be preserved for more than 3 days.

Ingredients : Cashew nuts – 1 grams, carrot ¼ kg,  Sugar – 200 grams, Rava- 2 grams, grated coconut – 1 cup,  Cardamom powder – 1 spoon, almond – 15 grams, ghee – 11/2 cup .

Preparation:  Cut cashews in to small pieces.  Fry cashew, rava and grated carrot in ghee separately.  While frying grated carrot add sugar and rava and stir well.  When the sugar dissolves add grated coconut, remaining ghee and cardamom powder.  Make laddus when the mixture is still hot and garnish with almonds.

Dry fruit kheer

Ingredients : Milk – 1 liter, almonds – 10, Cashew – 10, walnuts – 10, dry dates – 10, pista – 10, cooked rice – 1 cup, cardamom powder – 1 spoon, sugar – ½ cup, khoya – 3 spoons, ghee – ¼ cup.

Preparation:  Take almond, cashew, walnut, pista and dry fruits in a bowl and soak them in milk for one hour.  Make a paste of them in a mixie.  Keep some dry fruits aside and fry them in ghee.  Mash the cooked rice.  Boil milk.  Add dry fruit mixture and rice to the milk.  When the mixture leaves the sides of the pan add sugar, khoya and cardamom powder.  After some time add ghee, fried dry fruits and put off the stove.  The dry fruit kheer is ready.
